Organic Beet Greens (Vegan & Gluten-Free)

When most people buy a big bushy bunch of organic beets down at the local farmer’s market or harvest them from their home garden, they immediately begin dreaming up all kinds of delicious things to do with those plump red juicy bulbs. Stewed beets! Roasted beets with root vegetables! Beet salad! Fresh-pressed beet juice! They excitedly prep their beets, chopping off the greens on top and throwing them…right into the trash or compost. (Cue record scratch.) Hold it right there, Quick Draw. Those leafy greens on top are not only incredibly delicious, but are also one of the most nutrient-rich parts of the beet plant. Spinach & Pistachio Herb Rice (Gluten Free & Vegan)

I grew up with a Korean mom which translates to a 24-hour rice cooker on our kitchen counter throughout my childhood. Rice was a staple at EVERY meal. From Italian pasta to Texas bar-b-que, rice and kimchi would accompany all cuisines when dining with the Prikryls. Rice truly is comfort food to me, so it’s always fun to experiment with how to make it new and interesting. A friend of mine recently shared a Turkish Rice Pilaf with Spinach & Pistachio recipe with me that takes your tastebuds to a dream cloud. (click HERE for the link to that version) With so many family members and friends that have food allergies or are vegetarian, I’m always inspired to experiment with alternatives to traditional dishes that can fit every diet…a dish that everyone can dig into! Happy Memorial Day Weekend! As we all gather together to celebrate this weekend with bar-b-ques, picnics and potlucks, I am brought back to memories of my childhood. Driving to Granger, TX. Fresh dill growing like wildflowers flanking the steps to my grandparents’ back porch screen door. The intoxicating smell of fresh dill and laundry came wafting through as I ran up the steps and into my grandparents’ kitchen to see my grandma mixing her creamy half-mashed potato salad for supper. She would set the beautiful ceramic dish on the table with sausages and sauerkraut. My boisterous entrance was always followed by big hugs and a blessing as we gathered around the table. My dad was in the military and in my childhood innocence, I associated Memorial Day with family, fun and food. But as an adult, I also think of Memorial Day as a wonderful day to take a moment to honor my Dad, along with all of the men and women and their families who have sacrificed for our country. Crash Mixed Potatoes

Holiday Season is in full swing! Time for marathon feasting and gathering! This rustic potato recipe is my brother-in-law’s favorite holiday side-dish–both creamy and crispy in one delicious bite. Though these crash potatoes are sure to be a crowd pleaser all year round. They’re perfect for a fun brunch gathering, a hearty meat and potatoes night, or a lighter soup and salad luncheon. This recipe is like that favorite pair of jeans that you wear over and over again and accessorize as you please…it’s all about your preferences and your choice of potatoes. Serves 4   Ingredients 1 bag/a dozen mixed potatoes 1/4 cup olive oil 3 cloves of garlic 2 stems of rosemary salt & pepper to taste I love that the winter harvest brings us a variety of colorful vegetables in season.  In this version of crash potatoes, I use a variety of gold, purple, red and sweet potatoes.
